I have to give credit where credit is due. I spotted this yummy salad in the deli case of a local Haggens store in my town! I love peppers of most kinds and hatch peppers are one of my favorites. Haggens was featuring hatch peppers one week. Upon sampling that salad, I bought a small container of it to take home and really try! That’s how it began! The salad was fabulous and fresh with a beautiful, spicy sweet heat! So, I deconstructed the salad.
It pairs the hatch pepper with watermelon, cantaloupe and honey-dew melon! Haggens puts jicama in their salad for a neutral crunch but I decided to change that to putting some sweet onion in the salad instead. Cilantro is added for that special fresh flavor and I finish it with a seasoned honey olive oil and lemon juice dressing.
The end result is an uncommon flavor profile that delights the entire palate!
Here is how to put it together…
You will need:
1-2 Hatch Peppers (I like hot but medium or mild are fine, too), diced
2 cups Watermelon
2 cups Cantaloupe
2 cups Honey Dew Melon
1/2 cup chopped sweet onion
1/3 cup chopped fresh cilantro
For the dressing:
1/4 cup Honey
1/8 cup Olive, Avocado or Grape seed oil
1/8 cup lemon juice
1 tsp ginger paste
Salt and pepper to taste.
- Combine peppers, fruit, cilantro and onion in a large bowl.
- In a glass measuring cup or small bowl, combine honey, oil, lemon juice and seasonings together.
- Carefully drizzle the dressing over the salad and toss well.
- Let the salad sit for an hour or so in the refrigerator to meld together.
Serve it and enjoy!

Hi Cat! Just been really busy up here. Hubby’s retired so there is much to do together. Haven’t had much of a chance to sit at the computer to write, I’ve been so buys playing! As the weather turns us indoors, I hope to get more writing done! The list is growing. I’ll certainly be checking out your Den! Are you in Oregon? Or???

I wish we were back in Oregon, but hubby got a new Manager position so we are stuck in “Cactus” country one more year 😦
So happy to hear from you! Yes, Fall is here and Winter around the corner. So get back to writing! LOL. We hope to move to the Oregon coast in spring 2019.

It was fabulous hearing from you! Will be getting back into writing. Kind of went through a little metamorphosis, this year. Falling in love with peppers was a part of that. I’ve been focused on health and getting myself back to a better me! Feeling better than I have in years. Lots of physical activity. But now the storm season is here. Outdoor activities will be considerably more limited!
