The more I get into creating meals from fresh ingredients, the more I question what really goes into packaged products. I’ve always favored a good tequila lime marinade over seafood kababs and chicken.
Not long ago, I had a yen for halibut kabobs and I didn’t have any marinade to go over them, so I went to Google and typed in “tequila lime marinade” just to see what went into just making it as opposed to buying the pre-made stuff.
Much to my delight, I discovered how really very simple it is to make from fresh ingredients! All I needed to do was pick up some gold tequila and hit the produce section of the grocery store for the other ingredients and
~VIOLA! ~A wonderfully fresh marinade was created!
It’s so simple and so yummy, I not only put it on halibut kabobs for one meal but I also used it the next day for chicken tenders and wings! Marinading the chicken overnight in it made for a deliciously juicy chicken when grilled.
Here is how I made it!
The List:
1/2 cup gold tequila
1 cup of freshly squeezed lime juice (5-6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 jalapeno pepper, seeded and minced
1 tablespoon minced garlic
2 teaspoons sea salt
1 teaspoon pepper
3 tablespoons chopped cilantro
- Combine all ingredients in a bowl.
- Marinade seafood or chicken (overnight is best) and enjoy!
It’s that easy and better than any store-bought product out there!
